Our mission is to be a trusted choice for our community by delivering a true taste of home through multi-ethnic international delights.Food World Supermarket is seeking a skilled and passionate Sous Chef specializing in Japanese cuisine to support daily kitchen operations in a fast-paced, high-volume retail food environment.The ideal candidate will have expertise in authentic Japanese dishes, including sushi, sashimi, ramen, donburi, tempura, and other traditional or contemporary Japanese preparations. This role ensures consistent quality, authentic flavors, efficient back-of-house operations, and adherence to food safety standards.Key ResponsibilitiesMenu Development & PromotionsAssist in developing and updating Japanese menu offerings, including sushi, ramen, donburi, bento boxes, and hot dishes.Create promotional packages, combo meals, seasonal specials, and value meal sets to drive sales.Standardize recipes, portion sizes, and plating guidelines to ensure consistency and cost control.Monitor customer trends and recommend innovative items to enhance menu appealFood Preparation & ProductionPrepare authentic Japanese dishes such as sushi, sashimi, rolls, ramen, tempura, donburi, and Japanese-style salads.Maintain consistency in taste, portion sizes, and presentation.Prepare sauces, broths, marinades, and condiments from scratch.Oversee mise en place and batch cooking for ready-to-eat and grab-and-go counters.Ensure freshness, quality, and proper display of all food items.Kitchen OperationsAssist the Head Chef in supervising back-of-house operations.Monitor inventory levels and ensure proper stock rotation (FIFO).Control food costs and minimize waste.Ensure proper storage, labeling, and handling of ingredients.Maintain cleanliness and compliance with food safety and sanitation regulations.Team Leadership & TrainingSupervise, train, and mentor kitchen staff on Japanese cooking techniques and presentation standards.Coordinate workflow during peak service hours.Support scheduling, delegation, and staff performance management.Foster a collaborative and productive kitchen environment.Quality & Customer ExperienceEnsure food counters are visually appealing, well-stocked, and inviting.Maintain high standards of taste, quality, and presentation.Uphold the supermarket’s brand image through exceptional Japanese cuisine offerings.Qualifications & RequirementsProven experience as a Sous Chef or Senior Cook specializing in Japanese cuisine.Strong knowledge of sushi preparation, Japanese sauces, broths, and cooking techniques.Experience in high-volume or retail food production preferred.Knowledge of food safety and sanitation standards.Leadership, organizational, and communication skills.Culinary diploma or certification is an asset.Key CompetenciesExpertise in Japanese flavor profiles and cooking techniquesLeadership and team coordinationTime management and multitaskingQuality control and consistencyCost management awarenessWhy Join Food World Supermarket?One of the largest grocery retail operations (176,000 sq. ft.)Career advancement within a dynamic retail organizationMake a real impact in delivering quality food and service to the community
